Cider-Roasted Chicken & Apples
Ingredients
- 6 bone-in, skin-on chicken thighs, 5–6 oz each
- 2 Granny Smith apples, thinly sliced
- 1 tbsp finely chopped fresh rosemary
- 3 rosemary sprigs
- 2 tbsp extra-virgin olive oil, divided
- Kosher salt
- Black pepper
- ⅔ cup apple cider
- 2 tbsp honey
- 1 tbsp grainy mustard
- 1 tbsp unsalted butter
Directions
- Heat oven to 425°F.
- Season chicken generously with salt and pepper.
- Heat 1 tbsp olive oil in a large ovenproof skillet over medium-high heat.
- Place chicken skin-side down and cook about 8 minutes, until deeply browned. Remove chicken.
- Add apple cider, honey, and grainy mustard to the same skillet. Bring to a simmer and reduce about 5 minutes.
- Whisk in butter.
- Add sliced apples, chopped rosemary, and rosemary sprigs. Return chicken skin-side up.
- Bake about 20 minutes, until chicken reaches 165°F inside and apples are tender.
- Serve chicken with the apples and pan sauce.
If the chicken is done first, move it to a plate to rest while the apples finish in the oven.
Whipped Potatoes with Chives
Ingredients
- 3½ lb Russet potatoes
- 2 cups heavy cream
- ½ cup (1 stick) unsalted butter, divided
- 1½ tsp salt
- Fresh chives, for serving
Day before
- Heat oven to 450°F.
- Scrub potatoes and prick several times with a fork.
- Bake directly on the oven rack 50–60 minutes, until very tender.
- While hot, cut open and scoop the flesh into a large bowl.
- Mash or beat until smooth.
- In a saucepan, heat the cream with 6 tbsp butter until hot.
- Gradually fold the warm cream into the potatoes.
- Season with salt.
- Transfer to a microwave-safe serving bowl, cover, and refrigerate.
- Take the potatoes out of the fridge.
- Poke several holes in the plastic wrap.
- Microwave at 75% power about 14 minutes, stirring halfway.
- Stir well.
- Finish with the remaining 2 tbsp butter and chives.
Why the microwave? It keeps the oven free for the chicken.
Fall Greens with Apple & Goat Cheese
Salad
- 5 oz spring greens
- 1 large Granny Smith apple
- ⅓ cup dried cranberries
- ¼ cup pepitas or chopped raw pecans
- 2 oz chilled goat cheese
Apple cider dressing
- ¼ cup extra-virgin olive oil
- 1½ tbsp apple cider vinegar
- 1½ tsp honey
- 1 tsp Dijon mustard
- ¼ tsp fine sea salt
- Black pepper
Day before
- Whisk the dressing ingredients together.
- Refrigerate in a sealed container.
- Toast pepitas in a dry skillet until lightly golden. Cool and store covered.
- Chop the apple.
- Add greens, apple, cranberries, pepitas, and goat cheese to a large bowl.
- Refrigerate until close to dinner. Don't dress it yet.
- Right before serving, drizzle with enough dressing to lightly coat and toss.
Makes 4–6 side salads, so 5 oz of greens works for six as a modest side.
Pumpkin Chocolate Chip Blondies
Ingredients
- 2⅓ cups all-purpose flour
- 1 tbsp pumpkin pie spice
- 1 tsp cinnamon
- 1 tsp baking soda
- ¾ tsp kosher salt
- 1 cup unsalted butter, room temperature
- ¾ cup granulated sugar
- ¾ cup dark brown sugar
- 1 large egg
- 2 tsp pure vanilla extract
- 1 (15 oz) can pure pumpkin puree
- 2 cups dark chocolate chips
- ¾ cup pecans, roughly chopped
Directions
- Heat oven to 350°F. Line a 9×13-inch pan with parchment, leaving some overhang, and lightly grease it with nonstick spray.
- In a medium bowl, whisk the flour, pumpkin pie spice, cinnamon, baking soda, and salt.
- In a large bowl or stand mixer, cream the butter and both sugars on medium-high until smooth.
- Mix in the egg and vanilla, then the pumpkin. If it looks curdled, that's normal.
- On low, gradually add the dry ingredients. Mix just until combined.
- Fold in the chocolate chips and pecans with a spatula.
- Spread evenly in the pan. Bake 35–40 minutes, until the edges pull away and a toothpick in the center has a few moist crumbs.
- Cool completely in the pan before cutting.
Make ahead. Store in a single layer in an airtight container for up to 3 days. They're even better on day two.
Warm Cranberry Cider
Ingredients
- 1 liter apple juice
- 2 cups orange juice
- 1 liter cranberry juice
- ¼–½ cup sugar
- 3 cinnamon sticks
- ⅛ tsp ground cloves
Slow cooker
- Combine everything in the slow cooker.
- Cook on low 3–4 hours.
- Switch to warm for serving.
- Combine everything in a large stockpot.
- Bring to a gentle simmer.
- Cover and simmer gently about 30 minutes.
- Keep warm over very low heat while serving.
Making it ahead? Cool, refrigerate, and reheat gently about an hour before guests arrive.
Apple Cider Aperol Spritz
Per drink
- 2–3 oz apple cider
- 1 oz Aperol
- 2–3 oz Prosecco
- Splash of soda water
- Pinch of cinnamon
- Apple wedge
- Ice
For 6 drinks
- 12–18 oz apple cider
- 6 oz Aperol
- 12–18 oz Prosecco
To make
- Fill a glass with ice.
- Add apple cider and Aperol and stir.
- Top with Prosecco and soda water.
- Sprinkle with cinnamon and garnish with an apple wedge.
- Serve right away.
